Bohri Chicken Biryani Recipe

This Bohri Chicken Biryani Recipe will guide you in making a flavorful and aromatic chicken biryani, popular in the Bohri community.

Ingredients:
- 500 grams chicken, cut into pieces
- 2 cups basmati rice
- 1/2 cup yogurt
- 2 tablespoons ghee
- 2 onions, thinly sliced
- 2 tablespoons ginger-garlic paste
- 2 teaspoons red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 cups chicken stock
- 1/2 cup fried onions
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 1/4 cup saffron milk
- 1/4 cup milk
- 2 tablespoons rose water
- 1/4 cup ghee
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 2 bay leaves
- 4 cardamom pods
- 4 cloves
- 2 cinnamon sticks
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala

Instructions:

Marinate the chicken
Step 1:In a mixing bowl, combine the chicken pieces, yogurt, ginger-garlic paste, red chili powder, turmeric powder, and garam masala. Mix well and let it marinate for 30 minutes.

Cook the rice
Step 2:Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes. In a large cooking pot, bring water to a boil and add salt. Drain the soaked rice and add it to the boiling water. Cook the rice until it is 70% cooked. Drain the rice using a strainer and set aside.
