Ingredients:

  • 500 grams chicken, cut into pieces
  • 2 cups basmati rice
  • 1/2 cup yogurt
  • 2 tablespoons ghee
  • 2 onions, thinly sliced
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 cups chicken stock
  • 1/2 cup fried onions
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 1/4 cup saffron milk
  • 1/4 cup milk
  • 2 tablespoons rose water
  • 1/4 cup ghee
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 2 bay leaves
  • 4 cardamom pods
  • 4 cloves
  • 2 cinnamon sticks
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala

  • Mixing bowls

Instructions:

  1. Marinate the chicken
    Step 1:
    In a mixing bowl, combine the chicken pieces, yogurt, ginger-garlic paste, red chili powder, turmeric powder, and garam masala. Mix well and let it marinate for 30 minutes.
  2. Cook the rice
    Step 2:
    Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes. In a large cooking pot, bring water to a boil and add salt. Drain the soaked rice and add it to the boiling water. Cook the rice until it is 70% cooked. Drain the rice using a strainer and set aside.
  3. Prepare the biryani masala
    Step 3:
    In a separate pan, heat ghee. Add minced garlic, grated ginger, green chilies, bay leaves, cardamom pods, cloves, cinnamon sticks, and cumin seeds. Sauté until fragrant. Add the marinated chicken and cook until it is browned and cooked through. Remove the chicken from the pan and set aside.
  4. Layer the biryani
    Step 4:
    In the same pan, layer half of the partially cooked rice. Sprinkle half of the fried onions, chopped mint leaves, chopped coriander leaves, saffron milk, and rose water. Then, place the cooked chicken pieces on top. Layer the remaining rice and repeat the toppings. Drizzle ghee on top.
  5. Cook the biryani
    Step 5:
    Cover the pan with a tight-fitting lid. Place it on low heat and cook for 30-40 minutes or until the rice is fully cooked and aromatic. Remove from heat and let it rest for 10 minutes. Fluff the rice gently with a fork before serving.
