  1. Marinate the chicken
    Step 1:
In a mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, and garam masala powder. Add the chicken pieces and mix well to coat the chicken. Marinate for 30 minutes.
  2. Cook the rice
    Step 2:
Wash the basmati rice under running water until the water runs clear. In a large pot, bring water to a boil. Add the washed rice, cinnamon stick, green cardamom pods, cloves, and bay leaves. Cook until the rice is 70% cooked. Drain the rice and set aside.
  3. Prepare the saffron milk
    Step 3:
In a small bowl, soak saffron strands in warm milk. Let it sit for 10 minutes to infuse the milk with saffron flavor.
  4. Cook the chicken
    Step 4:
In a skillet, heat oil and ghee over medium heat. Add the sliced onions and cook until golden brown. Remove half of the fried onions and set aside for garnishing. To the remaining onions in the skillet, add marinated chicken and cook until the chicken is cooked through and tender.
  5. Layer the biryani
    Step 5:
In a large pot, layer the partially cooked rice and cooked chicken. Sprinkle the reserved fried onions, chopped mint leaves, and chopped coriander leaves on top. Drizzle the saffron milk and rose water over the layers. Cover the pot with a tight-fitting lid and cook on low heat for 30 minutes or until the rice is fully cooked and aromatic.
  6. Serve the biryani
    Step 6:
Gently fluff the biryani with a fork before serving. Serve the Lucknowi Chicken Biryani hot with raita or salad. Enjoy!
