  • 2 cups Basmati rice
  • 500 grams Chicken (cut into pieces)
  • 1/2 cup Yogurt
  • 2 tablespoons Ginger-garlic paste
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1/2 teaspoon Garam masala powder
  • 2 tablespoons Cilantro (chopped)
  • 2 tablespoons Mint leaves (chopped)
  • 2 tablespoons Cooking oil
  • 2 Onions (sliced)
  • 4 Green chilies (slit)
  • 1 cup Fried onions
  • 1/2 cup Milk
  • 1/4 cup Saffron strands
  • 1/4 cup Rose water
  • 1 cup Water
  • 1/4 cup Ghee
  • 1/4 cup Mint leaves (for garnish)


  • Large pot
  • Skillet
  • Spatula
  • Mixing bowl


  1. Prepare the rice
    Step 1:
    Wash the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes. Drain the water and set aside.
  2. Marinate the chicken
    Step 2:
    In a mixing bowl, combine the chicken pieces, yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala powder, chopped cilantro, and chopped mint leaves. Mix well to coat the chicken evenly. Let it marinate for 30 minutes.
  3. Cook the chicken and prepare the rice
    Step 3:
    Heat oil in a large pot. Add the sliced onions and slit green chilies. Sauté until the onions turn golden brown. Remove half of the fried onions and set aside for garnish. Add the marinated chicken to the pot and cook until it is browned. In a separate pot, bring water to a boil and add the soaked and drained rice. Cook the rice until it is 70% cooked. Drain the rice and set aside.
  4. Layer the biryani
    Step 4:
    In the same pot used to cook the chicken, spread a layer of rice at the bottom. Top the rice with a layer of cooked chicken. Repeat the layers until all the rice and chicken are used. Drizzle the milk over the top layer of rice. Dissolve the saffron strands in rose water and sprinkle it over the rice. Sprinkle the reserved fried onions and mint leaves over the top.
  5. Cook the biryani
    Step 5:
    Cover the pot with a tight-fitting lid and cook the biryani on low heat for 20-25 minutes, or until the rice is fully cooked and flavors are well infused. Remove from heat and let it rest for 5 minutes. Gently fluff the biryani with a fork before serving.
