  • 2 cups basmati rice
  • 500 grams chicken pieces
  • 1/2 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 2 large onions, thinly sliced
  • 4 tablespoons cooking oil or ghee
  • 4 cups water
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 1 teaspoon saffron strands, soaked in 2 tablespoons of warm milk
  • 2 tablespoons ghee
  • 1 teaspoon whole spices (cinnamon stick, cardamom pods, cloves)
  • 1/2 cup fried onions (birista)
  • 1/4 cup milk

  • Large cooking pot
  • Non-stick pan
  • Spatula
  • Mixing bowl

  1. Marinate the chicken
    Step 1:
In a mixing bowl, combine the chicken pieces, yogurt, ginger-garlic paste, red chili powder, turmeric powder, and garam masala powder. Mix well to coat the chicken evenly. Cover and let it marinate for at least 30 minutes.
  2. Cook the rice
    Step 2:
Wash the basmati rice under running water until the water runs clear. In a large cooking pot, bring 4 cups of water to a boil. Add the rice and cook until it is 70% cooked (the rice should still have a slight bite to it). Drain the rice and set it aside.
  3. Prepare the chicken biryani
    Step 3:
In a non-stick pan, heat 2 tablespoons of ghee. Add the whole spices (cinnamon stick, cardamom pods, and cloves) and fry for a minute until fragrant. Add the thinly sliced onions and sauté until golden brown.
  4. Layer the chicken and rice
    Step 4:
Spread half of the par-cooked rice evenly over the sautéed onions. Place the marinated chicken pieces on top of the rice. Sprinkle half of the chopped mint leaves and coriander leaves. Drizzle the saffron milk over the layers. Repeat the layering process with the remaining rice, mint leaves, coriander leaves, and saffron milk.
  5. Dum cook the biryani
    Step 5:
Cover the pan with a tight-fitting lid or aluminum foil to create a seal. Place the pan on low heat and let the biryani cook on dum (slow steam) for 30-40 minutes, until the chicken is cooked through and the flavors are well-infused.
  6. Serve the chicken biryani
    Step 6:
Remove the pan from heat and let it rest for 5 minutes. Gently fluff the biryani with a fork to mix the layers. Serve hot and garnish with fried onions (birista) and fresh mint leaves. Enjoy the delicious restaurant-style chicken biryani!
