Ingredients:
- 2 cups basmati rice
- 500 grams chicken, cut into pieces
- 3 tablespoons oil
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 2 teaspoons ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup yogurt
- 1 teaspoon lemon juice
- 1 pinch saffron strands
- 1/4 cup milk
- 2 cups water
- 1 teaspoon salt

Instructions:

Wash and soak the rice
Step 1:Wash the basmati rice under running water until the water runs clear. Then, soak the rice in water for 30 minutes.

Cook the rice
Step 2:In a large pot, bring water to a boil. Add salt to the boiling water. Drain the soaked rice and add it to the boiling water. Cook the rice until it is 70% cooked. Drain the rice and set it aside.

Prepare the chicken
Step 3:Heat oil in a skillet over medium heat. Add sliced onions and cook until they turn golden brown. Add ginger-garlic paste and sauté for a minute. Add chopped tomatoes and cook until they become soft and mushy. Add red chili powder, turmeric powder, and garam masala. Stir well.

Step 4:Add the chicken pieces to the skillet and mix well with the onion and spice mixture. Cook the chicken until it is cooked through and tender. Stir in the chopped coriander leaves and mint leaves. Remove from heat and set aside.
