  • 2 cups basmati rice
  • 500 grams chicken, cut into pieces
  • 3 tablespoons oil
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 2 teaspoons ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup yogurt
  • 1 teaspoon lemon juice
  • 1 pinch saffron strands
  • 1/4 cup milk
  • 2 cups water
  • 1 teaspoon salt

  1. Wash and soak the rice
    Step 1:
    Wash the basmati rice under running water until the water runs clear. Then, soak the rice in water for 30 minutes.
  2. Cook the rice
    Step 2:
    In a large pot, bring water to a boil. Add salt to the boiling water. Drain the soaked rice and add it to the boiling water. Cook the rice until it is 70% cooked. Drain the rice and set it aside.
  3. Prepare the chicken
    Step 3:
    Heat oil in a skillet over medium heat. Add sliced onions and cook until they turn golden brown. Add ginger-garlic paste and sauté for a minute. Add chopped tomatoes and cook until they become soft and mushy. Add red chili powder, turmeric powder, and garam masala. Stir well.
  4. Cook the chicken
    Step 4:
    Add the chicken pieces to the skillet and mix well with the onion and spice mixture. Cook the chicken until it is cooked through and tender. Stir in the chopped coriander leaves and mint leaves. Remove from heat and set aside.
  5. Layer the biryani
    Step 5:
    In a separate bowl, combine yogurt, lemon juice, saffron strands, and milk. Mix well. Take a large pot and spread a layer of cooked rice at the bottom. Top the rice with a layer of cooked chicken. Drizzle a portion of the yogurt mixture over the chicken. Repeat the layers until all the rice, chicken, and yogurt mixture are used. Cover the pot with a tight-fitting lid.
  6. Cook the biryani
    Step 6:
    Place the pot over low heat and cook for 20 minutes, allowing the flavors to blend and the biryani to steam. Remove from heat and let it rest for 5 minutes. Gently fluff the rice with a fork. Serve hot and enjoy the delicious Sindhi Chicken Biryani!
