  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1/2 cup plain yogurt
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1 lemon juiced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pita bread or flatbreads
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1 cup diced cucumbers
  • 1/2 cup sliced red onion
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1/4 cup fresh mint, chopped (for garnish)


  1. Marinate the chicken
    Step 1:
    In a large bowl, mix together olive oil, plain yogurt, minced garlic, ground cumin, paprika, ground coriander, ground turmeric, cayenne pepper, ground cinnamon, ground cloves, ground allspice, lemon juice, fresh parsley, fresh cilantro, salt, and black pepper. Add the boneless, skinless chicken thighs to the marinade, coating them well. Cover and refrigerate for at least 30 minutes or overnight for the best flavor.
  2. Cook the chicken
    Step 2:
    Preheat a grill or stovetop pan over medium-high heat. Cook the marinated chicken thighs for about 5-6 minutes per side or until they are fully cooked and have nice grill marks. Remove from heat and let them rest for a few minutes before slicing.
  3. Prepare the shawarma wraps
    Step 3:
    Warm the pita bread or flatbreads in a pan or microwave. Lay each bread flat and place the sliced chicken in the center. Top with chopped lettuce, diced tomatoes, diced cucumbers, and sliced red onion. Garnish with fresh parsley and mint.
  4. Roll and serve
    Step 4:
    Fold the sides of the bread over the filling and roll it tightly into a wrap. Secure with parchment paper or foil if needed. Serve the delicious and flavorful Classic Chicken Shawarma wraps immediately and enjoy!
