Ingredients:

  • 500 grams mutton, cut into pieces
  • 2 tablespoons ghee (clarified butter)
  • 2 onions, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 cup curd (yogurt)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon nutmeg powder
  • 1/4 teaspoon cardamom powder
  • 1/4 cup mint leaves, chopped
  • 1/4 cup coriander leaves, chopped
  • 2 cups water
  • Salt to taste
  • 1 tablespoon fried onions (birista)
  • 1 tablespoon cashews, soaked
  • 1/2 cup milk
  • 1/4 teaspoon saffron strands
  • 1/4 cup rose water

Supply:

  • Pressure cooker
  • Mixing bowls
  • Cooking spoon
  • Blender or grinder

Instructions:

  1. Marinate the mutton
    Step 1:
    In a mixing bowl, marinate the mutton pieces with ginger paste, garlic paste, curd, turmeric powder, red chili powder, coriander powder, garam masala powder, nutmeg powder, cardamom powder, mint leaves, and coriander leaves. Mix well and let it marinate for 30 minutes.
  2. Cook the mutton
    Step 2:
    Heat ghee in a pressure cooker. Add chopped onions and sauté until golden brown. Add the marinated mutton and cook for 5 minutes. Add water, salt, and fried onions. Close the pressure cooker and cook for 45 minutes or until the mutton is tender.
  3. Prepare the garnish
    Step 3:
    In a blender or grinder, blend soaked cashews with milk to form a smooth paste. In a small bowl, mix saffron strands with rose water. Set aside.
  4. Finish the mutton marag
    Step 4:
    Once the mutton is cooked, add the cashew paste and saffron mixture to the pressure cooker. Simmer for 5 minutes on low heat. Adjust the consistency and seasoning according to your preference.
  5. Serve the Hyderabadi Mutton Marag
    Step 5:
    Garnish the Hyderabadi Mutton Marag with fried onions and serve hot with naan or rice. Enjoy the flavorful and aromatic mutton marag!
