Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/2 cup water
  • 1/2 cup tamarind chutney
  • 1/2 cup mint chutney
  • 2 tablespoons vegetable oil (for brushing)

  • Slotted spoon

Instructions:

  1. Prepare the dough
    Step 1:
    In a large mixing bowl, combine the all-purpose flour and salt. Add the vegetable oil and mix well. Gradually add water and knead the mixture into a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. Divide the dough and shape the samosas
    Step 2:
    Divide the dough into small balls. Roll each ball into a thin oval-shaped sheet. Cut the oval sheet in half to make two semi-circles. Fold each semi-circle to form a cone, and seal the edges with water. Fill each cone with a spoonful of tamarind chutney and mint chutney.
  3. Seal and fry the samosas
    Step 3:
    Using water, seal the open edge of the cone to form a triangle-shaped samosa. Heat vegetable oil in a frying pan over medium heat. Fry the samosas until they turn golden brown and crispy. Use a slotted spoon to remove the samosas from the oil and place them on a plate lined with paper towels to drain excess oil.
