These Chutney-filled Samosas with Tamarind and Mint Chutney are a delightful Indian snack that you can enjoy as an appetizer or at tea time.

Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 1/2 cup water
- 1/2 cup tamarind chutney
- 1/2 cup mint chutney
- 2 tablespoons vegetable oil (for brushing)

Prepare the dough
Step 1:In a large mixing bowl, combine the all-purpose flour and salt. Add the vegetable oil and mix well. Gradually add water and knead the mixture into a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

Divide the dough and shape the samosas
Step 2:Divide the dough into small balls. Roll each ball into a thin oval-shaped sheet. Cut the oval sheet in half to make two semi-circles. Fold each semi-circle to form a cone, and seal the edges with water. Fill each cone with a spoonful of tamarind chutney and mint chutney.

Seal and fry the samosas
Step 3:Using water, seal the open edge of the cone to form a triangle-shaped samosa. Heat vegetable oil in a frying pan over medium heat. Fry the samosas until they turn golden brown and crispy. Use a slotted spoon to remove the samosas from the oil and place them on a plate lined with paper towels to drain excess oil.
