Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1/2 cup water
  • 3 medium potatoes, boiled and mashed
  • 1/2 cup green peas
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon amchur powder (dried mango powder)
  • 1/4 cup chopped cilantro (coriander leaves)
  • Oil (for deep frying)

  • Rolling pin
  • Mixing bowl
  • Frying pan
  • Slotted spoon

Instructions:

  1. Prepare the dough
    Step 1:
    In a mixing bowl, combine the all-purpose flour, salt, and vegetable oil. Mix well. Gradually add water and knead until you have a smooth dough. Cover the dough with a damp cloth and let it rest for 15 minutes.
  2. Prepare the filling
    Step 2:
    In a pan, heat 2 tablespoons of oil. Add cumin seeds and let them splutter. Add mashed potatoes, green peas, garam masala, turmeric powder, red chili powder, coriander powder, amchur powder, and salt. Mix well and cook for 5 minutes. Remove from heat and let the filling cool.
  3. Shape and fill the samosas
    Step 3:
    Divide the dough into small balls. Take a dough ball and roll it into a thin oval shape. Cut it in half. Take one half and shape it into a cone by bringing the straight edges together and sealing them with a little water. Fill the cone with the potato and pea filling. Apply water on the edges of the cone and seal it to form a triangular samosa. Repeat with the remaining dough and filling.
  4. Fry the samosas
    Step 4:
    Heat oil in a frying pan over medium heat. Carefully slide the samosas into the hot oil and fry until they turn golden brown and crispy. Remove with a slotted spoon and drain on a paper towel to remove excess oil. Repeat with the remaining samosas.
  5. Serve the samosas
    Step 5:
    Serve the hot and crispy potato and pea samosas with tamarind chutney or mint chutney. Enjoy!
