Lentil and Vegetable Samosa Recipe

This Lentil and Vegetable Samosa Recipe will teach you how to make delicious and crispy samosas filled with a flavorful lentil and vegetable mixture.
Note: You can adjust the spice level of the filling according to your preference by adding more or less chili powder.
Ingredients:
- 1 cup red lentils, rinsed and drained
- 2 cups water
- 1 tablespoon vegetable oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon salt
- 1/4 cup frozen green peas
- 1/4 cup chopped carrots
- 1/4 cup chopped bell pepper
- 1/4 cup chopped onion
- 2 tablespoons chopped cilantro
- 12 sheets filo pastry
- 1/4 cup melted butter

- Frying pan

Instructions:

Cook the lentils and prepare the filling
Step 1:In a saucepan, combine the rinsed lentils and water. Bring to a boil over medium heat, then reduce the heat and simmer for about 15 minutes or until the lentils are cooked and tender. Drain any excess water.

Prepare the samosa filling
Step 2:In a frying pan, heat vegetable oil over medium heat. Add cumin seeds and sauté until they start to crackle. Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well.

Add vegetables and cooked lentils
Step 3:Add frozen green peas, chopped carrots, chopped bell pepper, chopped onion, and cooked lentils to the frying pan. Stir well and cook for another 5 minutes. Remove from heat and let the filling cool down.

Prepare and fill the samosas
Step 4:Preheat the oven to 375°F (190°C). Place a sheet of filo pastry on a clean surface and brush it with melted butter. Fold the sheet in half lengthwise. Place a spoonful of the filling at one end of the strip. Fold the corner of the pastry over the filling to form a triangle. Continue folding the triangle until you reach the end of the strip. Repeat with the remaining filo pastry and filling.

Bake the samosas
Step 5:Place the samosas on a baking tray lined with parchment paper. Brush the tops of the samosas with melted butter. Bake in the preheated oven for about 15-20 minutes or until golden brown and crispy. Remove from the oven and let them cool slightly before serving.
