Ingredients:

  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1/4 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 8 sheets phyllo dough
  • 1/4 cup melted butter

Supply:

  • Baking sheet
  • Pastry brush
  • Mixing bowl
  • Knife

Instructions:

  1. Prepare the filling
    Step 1:
    In a mixing bowl, combine the drained black beans, frozen corn kernels, diced red and green bell peppers, chopped cilantro, diced red onion, salsa, ground cumin, chili powder, and garlic powder. Mix well until all the ingredients are evenly combined.
  2. Prepare the phyllo sheets
    Step 2:
    Preheat the oven to 375°F (190°C). Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place another sheet on top and repeat the process until you have a stack of 4 phyllo sheets.
  3. Assemble the samosas
    Step 3:
    Cut the phyllo stack into 3 equal strips. Place a spoonful of the prepared filling at one end of each strip. Fold one corner of the strip over the filling to form a triangle. Continue folding the triangle along the strip until you reach the end. Seal the end with a little melted butter. Repeat the process with the remaining phyllo sheets and filling.
  4. Bake the samosas
    Step 4:
    Place the assembled samosas on a baking sheet lined with parchment paper. Brush the tops with melted butter. Bake in the preheated oven for about 20-25 minutes or until the samosas are golden brown and crispy.
  5. Serve the samosas
    Step 5:
