Ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup cooked black beans
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/4 cup chopped cilantro leaves
  • 1 tablespoon lemon juice
  • 16 samosa wrappers
  • Oil (for frying)

Instructions:

  1. Cook the sweet potatoes
    Step 1:
    Boil or steam the sweet potato cubes until they are soft and tender. Drain and set aside.
  2. Prepare the filling
    Step 2:
    In a large mixing bowl, mash the cooked sweet potatoes. Add the cooked black beans, finely chopped onion, minced garlic, grated ginger, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, chopped cilantro leaves, and lemon juice. Mix well to combine.
  3. Assemble the samosas
    Step 3:
    Take a samosa wrapper and fold it into a cone shape, sealing the edges with water. Fill the cone with the sweet potato and black bean filling. Apply water along the open edge of the cone and seal it to form a triangular samosa. Repeat the process with the remaining wrappers and filling.
  4. Fry the samosas
    Step 4:
    Heat oil in a frying pan over medium heat. Carefully place the samosas in the hot oil and fry until they turn golden brown and crispy. Remove them from the pan and drain excess oil on a paper towel.
  5. Serve and enjoy

    Serve the sweet potato and black bean samosas hot with your favorite chutney or dipping sauce. Enjoy!
