Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 2 tablespoons red curry paste
  • 1 cup coconut milk
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon vegetable oil (for frying)

Instructions:

  1. Prepare the dough
    Step 1:
    In a mixing bowl, combine the all-purpose flour, vegetable oil, and salt. Gradually add water and knead until a smooth dough is formed. Cover the dough and let it rest for 15 minutes.
  2. Prepare the curry filling
    Step 2:
    In a frying pan, heat 1 tablespoon of vegetable oil. Add the red curry paste and cook for 1 minute. Stir in the coconut milk, mixed vegetables, sugar, and salt. Cook for 10 minutes or until the vegetables are tender. Remove from heat and mix in the chopped fresh cilantro.
  3. Shape and fill the samosas
    Step 3:
    Divide the dough into small balls. Roll out each ball into a thin circle. Cut the circle in half. Take one half-circle and fold it into a cone shape, sealing the edges with water. Fill the cone with the curry filling and seal the top. Repeat with the remaining dough and filling.
  4. Fry the samosas
    Step 4:
    In a frying pan, heat vegetable oil for frying. Carefully place the filled samosas in the hot oil and fry until golden brown and crispy. Use a slotted spoon to remove the samosas from the pan and drain on a paper towel to remove excess oil.
  5. Serve and enjoy
